Ingredients

  • 1 lb. medium shrimp, peeled and deveined, tails on
  • 1 cup grated fresh or frozen coconut
  • 1 tsp. cumin seeds
  • 3 chiles de árbol, stemmed
  • 2 plum tomatoes, chopped
  • <sup>1</sup>⁄<sub>4</sub> cup canola oil
  • 5 whole cloves
  • 4 pods green cardamom
  • 2 Indian or regular bay leaves
  • 1 stick cinnamon, halved
  • 1 medium yellow onion, chopped
  • 1 tbsp. ground coriander
  • 1 tsp. ground turmeric
  • <sup>1</sup>⁄<sub>2</sub> tsp. ground black pepper
  • 2 cloves garlic, mashed into a paste
  • 1 (1") piece ginger, peeled and mashed into a paste
  • 1 (14-oz.) can coconut milk
  • <sup>1</sup>⁄<sub>2</sub> cup chopped cilantro
  • 2 tsp. sugar
  • 2 small green Thai chiles or 1 serrano, thinly sliced
