• 2 x slices stale bread (sourdough works well)
• 200ml milk
• 1kg pork mince
• 3 cloves garlic, crushed
• 2 tsp Italian herbs or mixed herbs
• 2 tbsp pine nuts
• Zest of 1 lemon
• 50g parmesan cheese, finely grated
• Salt and freshly ground black pepper
• Olive oil
• 700g passata
• 1 fresh bay leaf
• Knob of butter
• 100g dried spaghetti
• Extra grated parmesan, black pepper and basil leaves, to garnish
