• 1/2 cup cucumber, finely chopped
• 3 tablespoons scallions, thinly sliced, divided
• 1 serrano chile, finely chopped
• pinch of sugar
• Kosher salt and ground black pepper
• 1/2 pounds chicken thighs, boneless, cut into 1 1/2" pieces
• 1/4 cup + 2 tablespoons fresh cilantro, chopped
• 1/4 cup plain yogurt
• 1 tablespoon Fustini's Gremolata olive oil
• 2 garlic cloves, coarsely chopped
• 1 teaspoon cracked coriander seeds
• 1 tablespoon Fustini's Parmesan Spice blend
