• 2 cups granulated sugar
• 1/2 tsp baking powder
• 1 tsp baking soda
• 3/4 tsp salt
• 1 1/2 cups warm, extra-strong coffee
• 3/4 cup 'light tasting' olive oil
• 1 1/2 tsp almond extract
