Ingredients

• 1 pound carrots, peeled and grated or spiralized
• 2 large, ripe tomatoes, chopped
• ¼ cup crushed peanuts
• 1 teaspoon sugar
• 1 teaspoon lemon juice
• ½ teaspoon salt, optional
• 2 tablespoons cilantro, chopped, optional
• 2 tablespoons coconut oil
• ¼ teaspoon turmeric
• ½ teaspoon cumin
• ½ teaspoon of mustard or sesame seeds, optional
• 2 tablespoons diced green chili peppers
