• 4 hot dogs
• 2 hot dog buns
• 1 tbsp olive oil
• 1 small yellow onion, thinly sliced
• ½ red pepper, sliced
• ½ green pepper, sliced
• 2 tsp Mexican Adobo Spice Rub
• ½ tsp salt
• Ketchup, mustard and mayonnaise for serving (optional)
• 3 small tomatoes, diced
• 1 avocado, diced
• ½ small red onion, diced
• Handful of chopped coriander
• 2 limes, sliced
