Homemade Fajita Quesadilla Recipe | Gran Luchito

Ingredients

• 1 tablespoon olive oil
• 2 chicken breasts, sliced into strips
• 2 teaspoons Gran Luchito Chipotle Paste
• 1 large red bell pepper, sliced into strips
• 1 red onion, cut in half-moons
• 3 spring onions, finely chopped
• 1 tablespoon tamari sauce
• Juice of 1 lime
• Salt and freshly ground pepper (for seasoning)
• 1 handful of coriander, finely chopped
• 1 pack of Gran Luchito Burrito Wraps
• 200g / 9 oz of grated mozzarella
• 1 jar of Gran Luchito Fire Roasted Serranos
