Oven Risotto with Roasted Mushrooms & Tomatoes Recipe

Ingredients

• 1 cup cherry tomatoes (cut in half)
• 1 tbsp olive oil
• 1/2 tsp salt
• 1/2 tsp garlic powder
• 1 lb mushrooms (cut or torn into 1-2" pieces - use any mushrooms like shiitake, oyster, king trumpet or whatever you can find)
• 2 tbsp olive oil
• 4 garlic cloves (minced)
• 6 thyme sprigs
• 1 white onion (medium in size - diced)
• 1 cup arborio rice
• 1/2 cup white wine (dry vermouth will also work)
• 1/2 tsp salt (plus more to taste)
• 1/4 tsp black pepper (cracked)
• 3 cups vegetable broth
• 1 cup parmesan (grated)
• 1 tsp lemon juice
• 1 tsp lemon zest
• 2 tbsp unsalted butter
• 1/4 cup fresh dill (chopped)
