- Olive oil
- 1/2 small onion, finely chopped
- 1 garlic clove, chopped
- 1 Medium Potato, Shredded
- 1/2 Summer Squash, chopped into quarter moons
- A handful of Arugula, chopped
- 3 eggs
- 3 pinches of salt
- Freshly ground black pepper
- 4 slices of cheddar
