Ingredients

• 3 lbs HOT ITALIAN TURKEY SAUSAGE, casings removed
• 1/4 c olive oil
• 3 c sweet onion, chopped
• 4 lbs red and yellow bell peppers, seeded and chopped
• 1/4 c fresh garlic, minced
• 1-1/2 c whole milk
• 1 tbsp fresh thyme
• 1/4 c Dijon mustard
• 1 tsp cayenne pepper
• 4 Dozen large eggs
• 1-1/2 c cold water
• Fresh thyme sprigs As Needed
