Polenta Chips with Stracciatella
Polenta Chips with Stracciatella is my version of the fresh Squacquerone cheese with polenta I love on my food & wine tour of Emilia-Romagna.
Ingredients
- 1.25 litres water
- 1 tablespoon salt flakes
- 250g yellow polenta
- 400g stracciatella cheese
- ⅓ cup extra virgin olive oil, plus extra for oiling
- 1/2 cup fig jam
- Green salad, for serving
