- 1 red onion, diced
- 1 250 ml (8 oz) of vegetable broth reduced in salt
- 2 potatoes (2 cups/500ml), diced
- 3 cups (750ml) ARCTIC GARDENS peas
- ½ ripe avocado
- 15 ml (1 tbsp.) (5 leaves) fresh mint
- ½ lime, juice
- 125 mL (½ cup) 5% cream
- Salt & Pepper from the mill
- Suggested toppings
- 125 mL (½ cup) Haloumi cheese, grilled and diced
- 125 mL (½ cup) crumbled bacon
