- 3/4 cup smoked cheddar, grated
- 3/4 cup mozzarella, grated
- Cascades of Parmesan cheese
- Two Tbsp butter (okay, maybe three)
- Splash of olive oil
- 1 tsp thyme
- 1/2 tsp rosemary
- 1 tsp Italian spices
- salt and pepper to taste
