BUTTER BEAN & SPICY CHORIZO STEW - Sherry's Kitchen Table

Ingredients

• 2 tbsp olive oil
• 1 onion
• 2 clove garlic,
• 3 inches of spicy chorizo
• 1 can broad beans
• 1 orange or red pepper,
• 2 small courgettes
• 1/2 can peeled plum tomatoes
• 2 tsp tomato paste
• 150 ml chicken or veg stock
• 10/12 stalks of thyme
• salt & pepper to taste
• parmesan to grate
