Creamy Fennel and Greens Soup - O‘ahu Fresh

Ingredients

• 1 tbsp olive oil
• 1 tbsp unsalted butter
• 1 fennel bulb (trimmed and chopped)
• 1 small onion (chopped)
• 1 lb mixed dark leafy greens such as collard (coarse stems and center ribs discarded and leaves chopped)
• 6 c water
• 3 c baby spinach
• 1/2 c heavy cream
• 1 tbsp fresh lemon juice
• fennel fronds (garnish)
