I had some smoked salmon and was looking for something different to make with it. I found a couple of recipes that when combined led to this creation
Ingredients
- 1 tablespoon butter, divided
- 2 medium green onions, sliced
- 1/2 roasted red pepper, diced
- 1/4 cup marinated artichoke hearts, rough chopped
- 3 ounces smoked salmon, crumbled
- 5 eggs or 1 1/4 cups egg substitute
- 3 tablespoons plain yogurt
- 1 teaspoon dried basil
- salt
- pepper
- 2 ounces feta cheese
