Ingredients

• 1/4 cup Fustini's Medium SELECT olive oil
• 1 large onion
• 2 garlic cloves, minced
• 1 can black beans, cleaned and drained
• 1 cup dry rice
• 2 tablespoons Fustini's 12 Year White Balsamic
• 2 cups chicken or vegetable stock
• 2 tablespoons chopped fresh parsley leaves
• salt and freshly ground black pepper
• avocado, sliced, garnish
• cherry tomatoes, sliced, garnish
• fresh cilantro, chopped
• salsa and tortilla chips
