Why This Zucchini Bread Is So Special This homemade zucchini bread recipe is the first recipe I ever posted here, and it's still one of my favorites.

- 2 C. Sugar
- 1 C. Vegetable Oil
- 3 Eggs
- 3 t. vanilla
- 2 C. Raw, grated zucchini (with skin on)
- 2 C. All Purpose Flour
- 1 t. Baking Soda
- 1/2 t. Baking Powder
- 1 t. Salt
- 3 t. Cinnamon
- 1 C. Chopped Walnuts (Optional)
