Ingredients

• 2 tablespoons butter
• 6-8 cloves garlic, minced
• ½ cup chopped onion
• 6 cups reduced-sodium chicken broth
• 9 ounces fresh or frozen cheese tortellini
• 1 (14.5 ounce) can diced tomatoes, including liquid
• 10 ounces spinach, washed and coarsely chopped
• 1 tablespoon fresh oregano, chopped
• 1 egg
• ½ cup grated Parmesan cheese
• salt and pepper, to taste
