Ingredients

• 2 pounds ground turkey (NOT white meat)
• 3/4 cup panko breadcrumbs
• 1/2 cup finely grated pecorino cheese
• 1 Tablespoon tomato paste
• 2 garlic cloves, grated
• 2 Tablespoons minced shallot (1 small)
• 2 large eggs
• 1/4 cup chopped fresh flat leaf parsley
• 2 Tablespoons chopped fresh basil
• 1 1/2 teaspoons kosher salt
• 3/4 teaspoon freshly ground black pepper
• 2 Tablespoons extra virgin olive oil (may need more)
• 1/2 small onion or 1 small shallot, finely chopped
• Pinch of red pepper flakes
• 1 can (28 ounces) whole peeled tomatoes, pureed (see note)
• 4 fresh basil leaves, plus additional for serving
• 8 ounces fresh mozzarella, thinly sliced
