- 2 lb of Potatoes, I use idaho or russets
- 1/2 of a Small Yellow Onion
- Few tablespoons of Olive Oil
- Salt and Pepper
- 8 Eggs
- 1/2 cup of Heavy Cream
- 5 Slices of Bacon, cooked and crumbled
- Couple Tbsp of Freshly Grated Parm
- 3 oz of Shredded Cheese, such as Gruyere or Cheddar
- Salt and Pepper to taste
