Ingredients

• 2 lbs chuck roast or bottom round roast
• ½ tsp salt
• 1 tsp black pepper
• 1 tsp garlic powder
• 2 tsp olive oil
• ½ cup red wine
• 2 cups beef broth
• 2 tbsp tomato paste
• 2 tbsp worcestershire sauce
• 1 large onion, sliced
• 1 lb bag of mini carrots
• 3 stalks of celery, chopped to 3 inch pieces
• 2 lbs baby potatoes
• 2 sprigs fresh thyme
• 1 tbsp dried parsley
• ½ cup cold water
• 2 tbsp cornstarch
