• 1 tbsp olive oil
• 1/2 pound boneless, skinless chicken breasts, cut into 1-inch pieces
• 1/2 onion, chopped
• 2 carrots, peeled and chopped
• 2 celery stalks, chopped
• 2 cups chicken broth
• 1/2 cup heavy cream
• 1/4 cup grated Parmesan cheese
• Salt and pepper to taste
