• 1/2 cup (100g) granulated sugar
• 1/4 cup (30g) cornstarch
• 1/4 teaspoon (1.25ml) salt
• 4 large egg yolks
• 2 tablespoons (30g) unsalted butter
• 1 teaspoon (5ml) vanilla extract
• 2 pounds (900g) fresh strawberries, hulled and halved or quartered if large
• 1/4 cup (60ml) water
• 2 tablespoons (30ml) cornstarch
• 1 tablespoon (15ml) lemon juice
