• 2 tablespoons olive oil
• pinch salt
• 1 small zucchini, sliced thinly lengthways
• 50g feta, crumbled
• ¼ cup pitted kalamata olives
• 50g baby fennel, thinly sliced
• ½ red onion, finely sliced
• 100g snowpea tendrils
• juice of ½ lemon
• salad to serve
