Ingredients

• ¼ cup (55 g) unsalted butter, softened
• ¼ cup (55 g) brown sugar
• 2 tbsp (30 ml) maple syrup
• ½ orange, zest finely grated
• ½ tsp ground cinnamon
• ½ tsp ground ginger
• ¼ tsp ground nutmeg
• 1 pinch ground cloves
• 2 cups (500 ml) water
• ½ to ¾ cup (125 to 180 ml) dark rum (see note)
• ½ cup (125 ml) 35% whipping cream
• 2 tsp sugar
• Ground cinnamon, to taste
