Ingredients

• 1 pound lean ground beef
• 4 cups beef broth
• 1 (16-ounce) jar salsa
• 1 (10-ounce) package frozen corn
• 1 (15-ounce) can black beans, drained
• 1 red bell pepper, chopped
• 1 (1-ounce) envelope taco seasoning
• 1 (16-ounce) box medium shell pasta
• 2 cups cheddar cheese, shredded, divided
• sour cream, to taste, for serving
• scallions, to taste, chopped, for serving
