Chilled Watercress Soup Recipe With Asian Pear - Great British Chefs
Shaun Rankin uses peppery watercress to wonderful effect in his chilled watercress soup recipe and dresses it with Asian pear and garden peas.
Ingredients
- 150g of unsalted butter
- 2 onions, peeled and finely sliced
- 6 bunches of watercress leaves
- 200ml of milk
- 700ml of water
- 1 Asian pear
- 1/2 lemon, juiced
- 1 tsp caster sugar
- 4 tbsp of fresh peas
- salt
- black pepper
