Ingredients

• 1 tsp Mexican chilli powder
• 2 tsp Dried Oregano
• 1 tsp ground coriander
• 2 garlic cloves (finely chopped)
• 2 tbsp olive oil
• 8 small chicken drumsticks
• 1 medium red onion (thinly sliced)
• 1 medium red capsicum (chopped)
• 400 g Tomatoes (chopped)
• 375 gm thick and chunky salsa (jar medium)
• 2 cups Chicken Stock
• 400 gm can of red kidney beans (drained, rinsed)
• ⅓ cup white long-grain rice
• 2 tbsp fresh coriander (chopped)
• Fresh Coriander Leaves (to serve)
