• 2 tsp grated fresh ginger
• 2 tsp ground cumin
• 1 tsp ground cinnamon
• 1 tsp ground turmeric
• 1 tsp sea salt
• ½ tsp black pepper
• 2 tbsp extra-virgin olive oil
• 2 tbsp clear honey
• 1.5 kg free-range chicken
• 2 bay leaves, bashed
• Steamed couscous, sprinkled with fresh coriander, to serve
