Minestrone Soup (Alternate Recipe)

Ingredients

• 2 onions, chopped
• 1 garlic clove
• 6 rashers of bacon chopped (optional)
• 1 tblspn olive oil
• 6 tomatoes
• 3 celery sticks, diced
• 2 large carrots, diced
• 1 zucchini, diced
• 4 small chopped potatoes diced
• 1 tblspn fresh basil, chopped
• 1 pack Italian soup mix (soaked overnight)
• 2L vegetable stock
• ½ pack Mancini pasta
• Extra olive oil, basil and grated parmesan to serve
