Ingredients

• 5 slices bacon, diced
• 3 tablespoons reserved bacon grease (or butter)
• 1 cup white or yellow onion, diced
• 4 cloves garlic, minced
• ¼ cup all-purpose flour
• 2 cups chicken or vegetable stock
• 2 cups whole milk, warmed
• 1½ lbs Yukon Gold potatoes, diced into 1/2-inch cubes
• 1 cup sharp cheddar cheese, shredded
• ½ cup plain Greek yogurt or sour cream
• 1 tsp sea salt
• ½ tsp black pepper
• Optional: Green onions, extra bacon, chives
