A whole chicken brined for 2 days in pickle brine, before being roasted and served with a pickle-potato salad. Heavenly!
Ingredients
- 1 large chicken
- 3 jars pickle brine
- Olive oil
- Salt and pepper, to taste
- 500g baby potatoes
- Handful pickles, diced
- 2 tbsp chives, finely chopped
- 2 tbsp dill, roughly chopped
- 1 green chilli, thinly sliced
- 100g feta, crumbled
- 1/2 lemon, juice
- Olive oil, to taste
