Creamy Salsify Soup with Salmon - SippitySup

Ingredients

• 4 tablespoons unsalted butter
• 3 (1 oz) chunks, pancetta or slab bacon
• 1 large onion peeled, trimmed, and thinly sliced
• 1 fennel bulb trimmed peeled, trimmed, and thinly sliced
• 1 celery stalk peeled, trimmed, and thinly sliced
• 3 cloves garlic
• 1 pinch each salt and white pepper as needed
• 1 bouquet garni made with 3 large basil leaves, 2 parsley sprigs, 1 thyme sprig and 1 bay leaf
• 1 pound salsify root
• 1 potato
• ½ cup heavy cream
• 6 ounces roasted salmon torn into shards
• 1 tablespoon dill leaves chopped
• 1 quart chicken stock
