Sweet Potato and Black Beans – Eric's Vegan Van

Ingredients

• 2 large sweet potatoes (diced into 1 cm cubes. peeled mine because they were a bit gnarly but leave it on if you wish)
• 3 medium carrots (sliced)
• 1 medium onion (diced)
• 2 ribs celery (sliced)
• 3 leaves kale (ribs removed and chopped )
• 398 ml black beans (1 can, I drained mine before thinking I shouldn't have. Your preference)
• 283 g Rotel tomatoes (1 can)
• 284 ml creamed corn
• 1 tsp salt
• 1 tsp pepper
• 2 tbsp taco seasoning
• 1 tbsp garlic powder
• 1 tsp paprika
• 1 L vegetable broth
