  • 2 Tbsp. salted butter
  • 2 (10-oz.) pkg. frozen corn, thawed or 4 1/2 cups fresh corn kernels (from 5 ears)
  • 2 oz. (about 1/4 cup) cream cheese, cut into pieces (from 1 [8-oz.] pkg.)
  • 2 Tbsp. Astor Apiaries New York City Raw H oney
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 2 Tbsp. thinly sliced fresh chives or scallions, plus more for garnish
  • Step 1. Cook corn: Start by heating the butter in a large nonstick skillet. Add the corn to the skillet and cook until it's tender, while stirring occasionally as you go.
  • Step 2. Add remaining ingredients: Add the cream cheese, honey, salt, and pepper. Stir often while continuing to cook until the mixture is creamy. Stir in the scallions or chives.
  • Step 3. Garnish and serve: Last, transfer the mixture to a serving bowl and add additional herbs for garnish.
  • Serve the dish immediately, or make it ahead: Honey-butter skillet corn can be made up to three days ahead and then reheated before serving.
