- 4 oz cream cheese
- 1 teaspoon chicken bouillon powder
- 6 cloves garlic cloves
- 1 cup mexican crema
- ½ bunch fresh cilantro, plus more, chopped, for garnish
- 2 tablespoons olive oil, plus more as needed
- 15 corn tortillas
- 1 lb shredded rotisserie chicken
- 8 oz freshly grated Manchego or Monterey Jack cheese
- sliced red onion, for garnish
