Ingredients

• 12-pound turkey, fully thawed
• 1 onion, peeled and quartered
• 1 lemon, quartered
• 1-2 sprig fresh rosemary
• 1-2 sprig fresh thyme
• 1-2 sprig fresh sage
• Salt and pepper
•  ¾ cup unsalted butter, room temperature
• 2 tbsp Southern Braai BBQ Sauce
• 6 cloves garlic, minced
• 1 tsp salt
• ½ tsp black Pepper
• 1 tbsp fresh rosemary, finely chopped
• 1 tbsp fresh thyme, finely chopped
•  1 onion, peeled and quartered
• 3 ribs celery, roughly chopped
• 2 carrots, roughly chopped
