Bacon, Cheese and Pomegranate Pastry Wreath

Ingredients

• 6-8 Slices Nueske's Applewood Smoked Bacon
• 1 Tbsp Unsalted butter
• 1 Large leek cleaned and chopped (use white and some green part of leek about 1 ½ -2 cups)
• 1 sheet (9 oz) Frozen Puff Pastry Dough, thawed according to direction on package or homemade puff pastry.
• 6 oz Goat cheese, crumbled
• 1/4 cup Grated Parmesan Reggiano Cheese
• Fresh ground black pepper
• 1 egg yolk and 1 Tbsp water whisked together
• 1/2 cup Pomegranate arils
• 1 cup arugula leaves, micro greens, or parsley
• 2-3 Tbsp Brown sugar
• 1-2 tsp Chopped fresh rosemary (optional)
