- ½ teaspoon whole black peppercorns
- ½ teaspoon whole coriander
- 1 ½ tablespoon reserved duck fat
- 1 tablespoon minced shallot
- 1 ½ tablespoons sherry vinegar
- 1 teaspoon Cheerwine syrup
- 1 teaspoon maple syrup
- 4 large eggs
- 2 teaspoons duck fat
- Salt and pepper to taste
- 1 head of curly endive (frisée)
- 1 head radicchio, torn into small pieces
- 1 dozen fresh cherries pitted
