Ingredients
- 450g (1lb) skinless chicken fillets
- 100g (4oz) vermicelli rice noodles
- 1 red onion, peeled and thinly sliced
- Small bunch of fresh coriander
- Handful of fresh mint leaves
- 1 ripe mango, peeled, stone discarded and cut into fine strips
- 4tsp roughly chopped toasted cashew nuts
- 1tsp dark soy sauce
- 1tsp sweet chilli sauce
- Juice of ½ lime
- 1tsp mild curry powder
- 1 garlic clove, peeled and crushed
- Pinch caster sugar
- 2tbsp torn fresh basil leaves
- 2tbsp sunflower oil
- 1 tsp caster sugar
- 2tbsp dark soy sauce
- 1tbsp sweet chilli sauce
- Juice of 1 lime
- 4 tbsp sunflower oil
