• 1 ½ pounds (680g) Yukon Gold potatoes, scrubbed and cut into ¾-inch (2 cm) cubes
• 1 large yellow onion, coarsely chopped
• 2 carrots, peeled and sliced into ½-inch (1 cm) rounds
• 2 bell peppers (any color), seeded and coarsely chopped
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• 1 teaspoon salt
• ½ teaspoon black pepper
• 1 teaspoon dried oregano
• ½ teaspoon smoked paprika (optional)
• 4 tablespoons butter, cut into pats
