Ingredients

• 2 cups warm water
• 1 tablespoon (one package) dry yeast
• 1 tablespoon sea salt
• 5 cups all purpose flour
• 1/4 cup lemon juice
• 1/2 cup olive oil
• For the filling:
• 1/3 cup olive oil
• 2 medium onions, chopped
• 2 leeks, white part plus 2 inches of the green, sliced to inch pieces
• 1 1/2 cups black juicy olives, like Amphissa, pitted and halved
• 1/4 cup pine nuts
• 2/3 cup parsley, chopped
• 1/3 cup fresh mint, chopped
• Freshly ground pepper
• 3 tablespoons milk for brushing
• 3 tablespoons sesame seeds to sprinkle (optional)
