Ingredients

• ½ to ¾ cup ice cold water
• 2 cups White Kamut flour, plus more for rolling out
• ½ teaspoon French gray coarse salt
• ¾ cup (1 ½ sticks) cold butter, diced
• 4 slightly beaten eggs
• 1/2 cup sugar
• 1/4 teaspoon salt
• 1/2 teaspoon vanilla
• 2 1/2 cups milk scalded
• 1-9 inch unbaked pastry shell
• Ground Nutmeg optional
