• 300g sweet potato, cut into cubes
• 2 zucchini, cut into discs
• 1 red onion, cut into wedges
• 2 cloves garlic, unpeeled
• 1 tsp olive oil
• 2 tsp dried thyme
• salt & pepper, to taste
• 100g mixed salad leaves
• 2 tsp balsamic vinegar
