Tasty Chicken Stuffed with Onions and Cheese - Yummy Gusto

Ingredients

• 1/2 cup grated mozzarella cheese
• 1 cup shredded gruyere cheese
• 4 chicken breasts without skin or bones
• 1/3 cup Parmesan cheese, grated fine
• A couple of onions, sliced thinly (2-3)
• 2 big spoons of butter (unsalted)
• A teaspoon of dried thyme
• 1/4 cup olive oil, split into 2 portions
• 1/2 teaspoon coarse salt, with extra for seasoning
• 1/2 teaspoon black pepper, extra for seasoning if needed
• 3/4 cup chicken broth, low salt
• Sprigs of fresh thyme for garnish
