Ingredients

• ¾ pound ground lean veal
• ¾ pound ground lean pork
• 1 tablespoon butter
• ½ cup finely chopped onions
• ¼ pound mushrooms, thinly sliced or chopped, about 2 cups
• ¼ cup heavy cream
• 1 large egg, lightly beaten
• ½ cup fine, fresh bread crumbs
• 2 tablespoons finely chopped parsley
• 1 teaspoon finely chopped rosemary
• Salt and freshly ground pepper
