Ingredients

• 4 ounces 60% cacao chocolate
• 1/4 cup boiling water
• 1/3 cup unsweetened cocoa powder
• 1/2 cup sugar
• 2 cups milk, whole or low-fat
• 2 cups heavy cream
• Pinch salt
• 1/4 teaspoon instant coffee (optional)
• 3 large egg yolks, whisked
• 1 teaspoon vanilla extract
