- 100 g (3½ oz) bacon
- 120 g (4¼ oz/2 cups) breadcrumbs
- 30 g (1 oz) butter, melted
- Ground nutmeg
- ½ tsp Dijon mustard
- Cayenne pepper
- 2 tbsp flour
- 500 ml (17 fl oz/2 cups) milk
- 3 large tomatoes
- 100 g (3½ oz/1 cup) Gouda cheese, semi-mature, grated
- 200 g (7 oz/2 cups) cheddar, grated
- 50 g (1¾ oz) butter
- 3 shallots
