MANDARIN ORANGE KALE SALAD

Ingredients

• 1/3 cup almonds
• 3 cups chopped lacinato kale
• 1 tablespoon honey
• Freshly ground black pepper
• 1/4 cup fennel fronds
• 1 1/2 teaspoon whole grain Dijon mustard
• 1/4 cup thinly sliced red onion
• Kosher salt
• 1 cup thinly sliced fennel bulb
• 1/2 cup extra virgin olive oil
• 2 tablespoons freshly squeezed mandarin juice
• 4 Wonderful Halos mandarin oranges
